Zucchini Pancakes
Zucchini
When I was a teen living in the Annapolis Valley, I worked during the summer as a casual farm hand, but I also grew some commercial crops on our farm and trucked them in to farmer’s markets and fruit and vegetable stands locally. One of the first crops I did this with was Zucchini – a pickup truck full could net me enough money to make it worth it.
Because the zucchini were so prolific we did do some composting with them, we even made a bunch of them into a jump for my sister's pony! Let’s just say, they’re pretty prolific. On the other hand, though, we had to come up with many recipes to use them.
Flash forward to our little 20x20 foot veggie patch here now, and one of the surest signs of summer coming along is that our zucchini are beginning to be harvestable – and so this morning one of my favourites, which Theo (who had helped harvest the zukes) approved of. We made Zucchini Pancakes!
It's been so dry I’m not sure we’ll get a huge crop, but it’s nice to be able to have fresh veggies from our own yard – and the gardening process is a fun thing to share with the next generation.
Food that’s about as local as you can get!
